Orange Cake


I was so busy cooking that I simply had no time to update my blog. Amongst my latest "creations" is a delicious Orange Cake. I saw the recipe on the Internet last week and thought it will be nice to try it. Lately I noticed a pattern in my cooking behavior - I never follow a recipe from start to end, I always alter something, add or change. Same happened here. In any case they called it Orange Cake with Warm Syrup... The syrup definitely adds but it is not a must in my opinion, if however you decide not to prepare the syrup I suggest adding some more sugar to the cake if you like real sweet cakes, otherwise you can follow the recipe as is.
So here is my adapted recipe:
ingredients:
cake
2 cups all purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
125 gr. Butter at room temperature
1 cup sugar
4 eggs
2 tablespoon candied citrus skin
1/2 cup freshly squeezed orange juice

syrup:
1/2 cup orange juice
2 tablespoon sugar
1 tablespoon orange zest
15 gr. Butter

Preparation
1. Pre-heat the oven to 175 C
2. Mix together all dry ingredients
3. Whip the butter and sugar to a puffy batter, add eggs one at a time.
4. Add candied citrus flour and juice alternately, finish with flour.
5. Pour the batter into a baking tin and bake for 40 min or until golden.
6. While the cake is in the oven prepare the syrup: put all the syrup ingredients in a small pot, boil and preheat before use.
7. When the cake is out of the oven with punch with a fork (a few holes) then brush the cake with the syrup. Leave the cake to cool down and then take it out of the tin.
The cake is ready!
