It has been a while...

Well, Scott from The Real Epicurean was kind enough to check my blog a couple of times and asks me if I forgot blogging.
So my answer is, no! I did not forget blogging but so many things have happened in the past few months that I hardly had time to write.
I turned 27, I feel a but old now, things are not as they used to be... Especially the body, it totally changes its shape as we grow older.
So part of the reason I did not write anything exciting about food is because I am trying to do this GI diet - Glycemic Index diet, for medical reasons. In this diet I am not allowed to eat simple carbs, which means I hardly have time to bake, which is my favorite cooking activity.
On the other hand I get to cook quite much, especially using vegetables, and lentils. It is now the season of green broad beans (Fava beans). Since it has a very short season and the broad beans are so great I hurried to the "greengrocer" to grab some.
Here is a recipe for Rice with Broad Beans or Ruz Ful as my Lebanese grandmother calls is.
I alter the original recipe she gave me and used brown rice as I am not allowed to eat the plain rice.
ingredients:
2 onions, sliced
Pine nuts
1 cup brown rice
1/2 cup fava beans (separated from the coat)
oil
salt and pepper

Preparation:
1. Fry onion in a frying pan.
2. In a cooking pot boil the beans - until slightly soften (about 10 min)
3. Pour out the water and sieve the beans.
4. In the same or in a different pot fry the rice
5. Add the boiled beans and half of the fried onions
6. Add water (1.5-2 cups) and cover
7. Check after half an hour to see if the rice is soft, if it is close the fire and let it rest for 15 more minutes. If it is not yet soft let it cook for some more time until ready.
8. After cooking and resting time is over, put on a serving dish, distribute the rest of the fried onion on top and add also some pine nuts.

This dish is very nutritious as it contains the beans which are rich with protein and the complex carbs which are healthier than the simple carbs. I love it!
